To celebrate, we asked three downtown Las Vegas bars to share their champagne cocktails with us:
Velveteen Rabbit's Champagne Wishes & Caviar Dreams
Velveteen Rabbit's Derrick Henninger was inspired by his cava syrup as he was creating this libation. The semi-sweet and umami cocktail features Camembert-infused vodka, ligonberry-cava syrup, benedictine, rue grappa, black truffle salt and caviar. The name comes from the late Robin Leach's famous catchphrase.

The Kitchen at Atomic's 1915
The Kitchen at Atomic has a sweet and spicy cocktail on its menu that's topped with champagne. The 1915 features Pernod Pastis, Angostura bitters, housemade pineapple-serrano syrup, lime, cucumber and bubbles.
Downtown Cocktail Room's Celebration Punch
Downtown Cocktail Room (DCR) brought back a 2009 original cocktail for this year's winter menu. The Celebration Punch features vodka, sparkling, flower water, cranberries and orange slices. It's available in two sizes and can be shared between as many as 12 people. DCR's menu description for this punch includes a resolution for patrons: "Celebrate every day, enjoy each moment."
